This hydrometer is used to measure the apparent extract towards the end of fermentation. It serves to obtain a more accurate final apparent extract measurement than what is obtained from the 0-20°P hydrometer.
The temperature correction functions to obtain a more accurate reading from the apparatus. The correction on Plato reading is done by adding or subtracting the value corresponding to the measured gravity range (horizontal ranges) and the sample temperature (vertical temperature values)
